How do I know a meal is a hit? When my father devours it and asks for more.
I wanted to try a new dish that I could use for a dinner party appetizer, or as a snack for an evening of wine with friends..who naturally are all watching their weight with new year’s resolutions. But let’s face it…who really wants to avoid having something that is creamy and decadent?
So I decided to try to do a mash up of two concepts, and so I did stuffed peppers and instead of a meat filling, I did creamy chickpeas.
I wanted to make sure this was fast and easy and so I looked around the kitchen to decide what could make that happen quickly. I had canned chickpeas..always a pantry staple (see post on pantry staples for quick entertaining here—> easy entertaining pantry staples) and looked around for ingredients to make it fresh
For flavour, I added coconut oil to a pan and sautéed scallions, thyme, a plum tomato and a clove of finely chopped garlic. I then sprinkled a pinch of salt, onion powder, garlic powder and course black pepper.
